Ingredients

  • 1 cup 225 g salted butter, softened
  • 4 –6 roasted garlic cloves mashed
  • 1 tablespoon fresh parsley finely chopped
  • 1 teaspoon fresh rosemary or thyme finely chopped
  • A small pinch of salt optional
  • 1 manufacturer-approved food-safe wick specifically suitable for edible butter candles and open-flame use
  • Crusty baguette sourdough, or toasted bread, for serving

Method

  1. Roast the garlic. Preheat the oven to 400°F (200°C). Cut the top off a garlic bulb, drizzle lightly with olive oil, wrap in foil, and roast for 40–50 minutes until soft. Cool completely and mash 4–6 cloves.
  2. Mix the butter. Place the softened butter in a bowl. Add the roasted garlic, chopped parsley, rosemary or thyme, and optional salt. Mix until evenly combined.
  3. Prepare the mold. Use a clean, food-safe mold, such as a suitable paper cup. Make an opening in the base and position the approved wick according to its manufacturer's instructions. Secure it upright.
  4. Fill the mold. Spoon the garlic herb butter around the wick, pressing gently to remove large air pockets. Smooth the top and check that the wick remains centered.
  5. Chill until firm. Refrigerate for at least 2 hours, or until the butter is firm throughout.
  6. Remove the mold. Carefully peel or cut away the mold without breaking the butter. Place the candle upright on a heat-safe, rimmed serving dish.
  7. Serve with bread. Arrange sliced baguette or sourdough around the candle. If lighting it, follow the wick manufacturer's instructions and supervise the flame continuously. Extinguish it before it becomes unsafe. Alternatively, serve the butter unlit as a flavored compound butter.

Notes

  • Use softened butter, not melted butter, so the candle holds its shape.
  • Cool the roasted garlic completely before mixing.
  • Chop herbs finely for an even texture.
  • Refrigerate the candle until serving time.
  • Use only a wick specifically verified for this food application. Ordinary candle wicks and kitchen twine should not be assumed safe.
  • Place the candle on a stable, heat-safe dish away from children, pets, and flammable materials.
  • Never leave a lit butter candle unattended.
  • Refrigerate leftovers promptly if they have been handled safely. Discard butter contaminated by used dipping utensils or exposed unsafely during serving.
